Best Harvest Loaf- Ever


This recipe was one that I accidentally created because I didn’t have all the ingredients for a different recipe. I was completely surprised when my kids said it was delicious. I was double excited when a little friend who is pretty selective snuck his little fingers in and fully enjoy a whole piece!!

With no added sugar, but lots of warming squash, apples and pumpkin spices, this recipe is nutrient-dense,  high in fibre AND flavour!!!


2.5 cups Whole grain all purpose GF flour
1 scoop Vanilla protein powder (I love Pure Paleo)
2 tsp Gluten free, aluminum free baking powder
1 tsp Sea salt
1 tsp Cinnamon
3/4 Coconut oil, melted
2 Eggs or egg alternative
1 cup Water or milk of choice (almond, coconut etc/.)
1 tbsp Raw apple cider vinegar
1 cup Pureed butternut squash (or pumpkin)
3 Apples, diced


Grease a muffin tray or a loaf pan with coconut oil
Preheat oven to 400 Degrees
Combine dry ingredients and mix
Separately, mix all wet ingredients and add into bowl containing dry ingredients.
Once dry and wet ingredients are mixed, add apples and mix once more.
If making muffins- bake for 20 minutes, then inset knife to see if it’s cooked through
If making a loaf- bake for 50 minutes, then insert knife to see if it’s cooked through
Once cooked- allow to cool

    I’m so excited to try this; however, I can’t seem to see the quantity of apples to use, and what kind? Looking forward to your response.

    Looks like a great recipe that I would like to try, but it doesn’t show apples in the ingredient list, but says to add them last??

      Thanks Michele! I have just adjusted the recipe. It’s 3 apples, cut up and added to the mixture!
