07 Apr My Easy-Peasy Nutrient-Packed Banana Bake
Here it is! You are going to love this quick and easy banana bake. Not only is it quick and easy, it’s filled with healthy ingredients that even your kids will enjoy. Serve it as a dessert, a healthy snack the next day and pack it in your kids lunches!
Prep time: 10 mins
Cook time: 20 mins

Ingredients:
- Coconut oil
- 3-4 bananas
- Oat/almond milk
- 1/3 cup sunflower seeds
- 1/3 cup chia seeds
- 1/3 cup hemp hearts
- 3/4 cup oats
- 2/3 cup of frozen blueberries
- Yogurt (coconut or cows milk)
- Honey
Instructions:
1. Coat bake pan with coconut oil
2. Place your bananas in the pan and mash them up

3. Add just enough milk on top so you can see about half a cm of liquid over the bananas

4. Add sunflower seeds, chia seeds and hemp hearts

5. Mix in oats and blueberries

6. Bake at 350 degrees for 20 mins (when done, it should look like a baked cake)

7. Let cool and top with yogurt and honey when serving

Substitutions/Variations:
The substitutions and variations of this dish are endless! Here are some that I have come up that I will be giving a try in the future:
- Make it pumpkin by using cinnamon and nutmeg. I would use chocolate chips instead of blueberries with this one and add a drizzle of maple syrup on top.
- Instead of blueberries, add chocolate chips and serve with nut butter on top.
- Apples and cinnamon instead of bananas? Yummy! Definitely going to try this.
- Pecans are great with pumpkin and walnuts would be great with the banana or apple.
