04 Dec The Ultimate Holiday Appetizer; Cranberry Baked Brie

BAKED BRIE! Those two words are music to my ears. I LOVE baked brie, especially during the holiday months. It is the ultimate holiday appetizer!
It’s easy to prep, easy to make, and very easy to eat.
Cranberry Baked Brie
Ingredients:
- 1 8-16oz round brie
- 2 cups of fresh cranberries
- 1 large navel orange zest and juice
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- Pinch of ground cloves
- Pinch of salt
- 1 packet of stevia (other sweetener options 1/8 of cup of maple syrup, coconut sugar or raw sugar)
- Walnuts for garnish (optional)
Instructions:
Cranberry Topping:
- Start by zesting the entire orange and then juicing it.
- Add all the ingredients (less the brie & walnuts) into a pot and warm until all the cranberries have popped.
- Reduce down to a jam consistency and adjust sweetness level based on preference using the sweetener options. There should be a good balance of tart and sweet.
Brie:
- Preheat oven to 350 degrees.
- Unwrap brie and place in a small, shallow ovenproof dish slightly larger than the brie OR a place on a piece of parchment paper.
- Slow bake until “puffy” or you know the insides are soft and melted, usually about 15-20 minutes.
- Top the brie with the cranberry mixture and walnuts and serve with your favourite toasted crostini or crackers.
We enjoyed this appetizer with some non-alcoholic wine, bought from a neat boutique called Young Street Winery in Aurora.
